About Andaz Hiroshima
Andaz Hiroshima will occupy the upper floors of KAMIHACHI X, a striking new landmark in the heart of Hiroshima. Inspired by the city’s six rivers flowing towards the Seto Inland Sea, the hotel’s design celebrates Hiroshima’s natural beauty, vibrant culture, creativity and warm spirit. Envisioned as a “lighthouse for Hiroshima,” Andaz will be a beacon of connection, discovery and community.

With 235 guestrooms and suites, wellness facilities, an indoor pool and fitness centre, Andaz Hiroshima will bring together a vibrant mix of dining, drinking and social experiences. From lively all-day dining and curated cocktail experiences to a Japanese-inspired rooftop venue with panoramic views, the hotel will offer guests many ways to discover the character of the city.

The Role & Key Responsibilities　
As Executive Chef, you will shape and lead the culinary direction of Andaz Hiroshima. This is a rare opportunity to help bring a landmark hotel and its culinary experiences to life, creating a distinctive culinary identity rooted in Hiroshima and the wider Setouchi region.

You will champion local ingredients, producers and food culture, translating them into memorable experiences across the hotel. With an international perspective and a strong sense of personal style, you will create food that feels both connected to its place and true to the open, expressive spirit of Andaz.

Reporting directly to the General Manager, you will lead the hotel’s culinary team and oversee food across four distinct venues, plus in-room dining, in-room culinary programing and Event with 400 sqm meters of event space.

• Define and lead the overall culinary vision and direction for Andaz Hiroshima.
• Develop distinctive food concepts and curate menus for the hotel’s 4 food and beverage venues:
  • The main all-day dining restaurant, with a Western-inspired approach.
  • The Andaz Lounge and Bar, afternoon tea and lively afternoons.
  • The signature rooftop venue, serving Japanese-inspired kappo-style small plates, highlighting the best of the region.
  • Intimate speakeasy cocktail bar with seating for approximately 15 guests.
• Bring Hiroshima and Setouchi ingredients, producers and culinary stories to life through menus and culinary activations across the hotel.
• Lead menu development and ensure that food is creative, well-executed and consistent with each venue’s concept.
• Support the setup and delivery of the hotel’s overall culinary product in partnership with the opening team and relevant departments.
• Curate the in-room dining offering and develop a thoughtful, detailed guest amenity program.
• Oversee food across four distinct venues, as well as in room dining, in room culinary programming, and events across approximately 400 square meters of event space.
• Build, inspire and develop a skilled culinary team, creating a culture of collaboration, creativity and pride.
• Work closely with the General Manager and hotel leaders to create a connected and memorable guest experience across all areas of the hotel.
• Champion Hyatt's Purpose, Values and Standard while expressing the distinctive character of Andaz Hiroshima.

総料理長に期待される役割
総料理長として、アンダーズ広島の料理に関する方向性を策定し、リードします。広島を代表するホテルとその料理体験をつくり上げ、広島および瀬戸内地域に根ざした独自の料理アイデンティティを確立するまたとない機会です。 広島・瀬戸内の地元食材、生産者、食文化を取り入れ、ホテル全体を通じて記憶に残る料理体験と国際的な視点や個性を生かし、地域とのつながりを感じられると同時に、開放的で表現力豊かなアンダーズらしさを備えた料理を創造していただきます。
総支配人にレポートし、ホテルのカリナリーチームを統括するとともに、4つの特徴ある飲食施設、インルームダイニング、客室内で提供する料理プログラム、そして約400㎡の宴会・イベントスペースにおける料理全般を監督します。
